Easy-Peasy Taco Soup

This soup is a favorite at our house and the bonus is that it is SOOOO easy to make! (please forgive the picture, I had to run outside to take it, I was running out of light and I was starving!)

INGREDIENTS:
2 cups cooked chicken (approx. 6 frozen chicken tenders)
1 large yellow onion, chopped
1 - 15 oz can diced tomatoes
1 - 15 oz can kidney beans, drained
1 - 15 oz can chili beans, drained
1 - can of corn, drained
1 - 1 1/2 pkg of taco seasoning (depending on your preference)
1 tbsp chilies in adobo 
1 1/2 - 15 oz  tomato can of water 

Topping: 
Tortilla chips
Shredded cheddar cheese
Sour cream
Green onions (optional)

DIRECTIONS:
Drizzle a little oil in a skillet add chicken and lightly season with cumin, garlic powder, black pepper and Lawry's. Let cool and chop into small bite size pieces.

In a large pot melt a tablespoon of butter and saute onions. After the onions become slightly browned and translucent add in ALL the rest of the soup ingredients! (told ya, EASY) Bring to a simmer and let cook for 10 minutes. Taste the soup to see if you would like more taco seasoning and add according to taste. 

Serve and top with sour cream, cheese and smashed tortilla chips.
